If you're looking for a new and fresh salad dressing, this recipe might be what you're looking for. This recipe is taken from What the Bible Says about Healthy Living Cookbook. I've been trying different recipes so that you and I can get a flavor of the diversity of what this cookbook as to offer. The authors and I think a like. Whole foods with lots using lots of vegetables. I know I will be making good use of this book There are so many refreshing and simple recipes, I can wait to try more.
Here is a simple salad with topped with a salad dressing using strawberries and minimal ingredients.
Ingredients for Salad
Spinach for 4 people (6-8 ounces or a good handful for each person) rinsed well and chopped if preferred
1/4 Red onion thinly sliced
1/2 cucumber diced
1/2 red pepper diced
avocado cut into small bite size pieces
any other vegetable, sprouts or seeds you would like to add
strawberries sliced
Ingredients for Dressing
(makes about 1 cup)
1 cup sliced fresh strawberries or thawed frozen straweberries instead
3 tbsp balsamic vinegar
1 tbsp orange juice or apple juice (we juiced an apple and part of the juice)
1 tbsp extra virgin oilive oil
heaping 1/4 tsp dried thyme (we used oregano)
1 tsp Dijon mustard
several dashes salt
several generous grindings of pepper
