Garlic Ginger Broccoli

Here is the first recipe we decided to taste test from Hope Egan's and Amy Cataldo's book What the Bible Says about Healthy Living Cookbook, Garlic Ginger Broccoli.  It was a hit! Garlic Ginger Broccoli

1 bunch broccoli (about 1 lb without stalks)
1 inch piece of fresh genger
3-4 garlic cloves (I added more)
2 tbsp extra virgin olive oil
Juice of ¼ lemon (about 1 tbsp)(we added more)
Dash of cayenne pepper
Scant ¼ tsp salt
Several generous grindings of pepper

Directions

  • Using the broccoli without the stems, break or cut the florets into small bite size pieces. Place them into a medium bowl
  • Peel the ginger and grate or finely chop. Chop the garlic. And add both to the bowl of broccoli.
  • Add the remaining ingredients to the bowl and mix to coat the broccoli.
  • We stir-fried the broccoli mixture in our cast iron pot for about 5-6 minutes.

This is an easy recipe with much nutritional value. I loved it and would make this again. The ginger and lemon added much flavor.

  3. I love broccoli and will definitely try this recipe. IMO, broccoli doesn't need too many spices to taste great. Here's an Indian recipe I tried and it was pretty good.
