Preparation Day Link-Up ~ Make Ahead Middle Eastern Food


Welcome to Preparation Day Link Up!  This is a place for all to share their Shabbat menus, tips, preparation plans, lessons, and reflections to encourage one another in many details of preparations involved with keeping the Shabbat set apart. This will be a wonderful opportunity to bless and encourage one another as Keepers of our Homes mamas and papas and children. who prepare for Shabbat every week.  We'd love to hear your encouraging posts as not all mamas are able to always be at home. This linky will be open until Friday at 5pm CST.

      1. Here's a wonderful salad that will keep for several days, great for make-ahead Shabbat meals. It's Israeli Salad, and it is wonderful! On Wednesday I had some leftover from Sunday, and it still tasted fresh, but even tastier than when freshly made. It benefits greatly from resting in the fridge.

        Israeli Salad

        1 Large English Cucumber (or 5-6 Persian baby cucumbers), cut into quarters, then to 1/2" dice
        1 Bell Peppers, any color (1 to 2), stemmed, seeded and cut into 1/2" dice
        6 Green Onions (6 to 8), cut into 1/2" pieces, using both white and tender green parts
        6 Radishes (6 to 8), sliced thinly
        4 Ribs Celery, strings removed, cut into 1/2" diagonal slices
        12 Ounces Tear Drop Tomatoes, or cherry tomatoes, cut into halves, or coarsely chopped regular tomatoes
        2 Kosher Dill Pickles (2 to 3), quartered lengthwise then cut into 1/2" dice
        6 Ounces Large Ripe Black Olives, drained and sliced (or 2 small cans sliced)
        6 Ounces Pimiento-stuffed Green Olives
        1/2 Cup Extra Virgin Olive Oil (or to taste)
        Salt and Pepper, to taste

        Try to cut all vegetables about the same size. Combine all in bowl.

        Pour olive oil and salt and pepper to taste over vegetables and mix gently to blend. Refrigerate at least 1 hour for flavors to blend.
